This magazine issues on the threshold of one of the lightest holidays – Easter! We congratulate you from the bottom of our heart and wish splendid health, peace of mind and family well-being!

We bring to your attention the reportings from the most interesting international events, devoted bread making, confectionery manufacture, public catering sphere – the exhibitions EUROPAIN-2012 (3rd –7th March, Paris), SALIMA (28.02 – 02.03, Brno), HoReCa&ReTailTech (20th – 23rd March, Minsk), «Baking and confectionery industry» (3rd – 5th April, Kiev), and also from the international conference and quality review «Pies. Wafers. Cookies. Gingerbreads» (27th – 29th February, Moscow).

What confectionery products should be? How they should be produced? How to accustom the consumer to new, delicate tastes? You will find the answers on these and other questions in the interview with a French confectioner, the native of Ukraine – Valentina Shtefano who has received a title «Macaron Queen» (ěacaron – a well-known French cake).

We can fully name the heading «Manufacture» as international. Here you can get acquainted with the experience and achievements of the baking enterprises of four countries at once: Belarus – the bakery «Automat» Municipal industrial unitary enterprise «Minskhlebprom» presents an innovative product – mini-sushki «Kusariki», the company «Kurtje» offers sweets of a premium segment of PLAISIR trade mark; Ukraine – Open joint-stock company «Kievhleb» informs about its new awards; France – the bakery «Raphael» – the question is about the features of the traditional French baguettes production technology; Czech Republic – the bakery ADELKA a.s. – Marina Kashko, the chief of the baking and macaroni industry division of Bakery Department, shares the impressions.

This issue of the magazine will take part in the international specialized exhibition «Bread/ConfectionerExpo» (24th –  26th April, Kiev), «Modern bakery» (13th –  15th June, Moscow) where we will be glad to meet you on our stand.
